I Dare You Key Lime Pie

Ever made a raw, vegan dessert? Meaning, it was plant-based and required no cooking? This 6-ingredient key lime pie may be raw and vegan and healthy, but it tastes like an indulgent treat! Perfect for summer, it is elegant enough for high tea but easy enough to whip together on a weekday night. I dare you to try this version over the classic!

What (your ingredients):


For the Crust:


1 cup whole hazelnuts


5 dates, pitted


For the Lime Filling:


1 ripe avocado


3 limes, zest and juice (You could use about 5 key limes to make it a traditional “key lime pie”)


1 cup cashews (soaked in hot water for at least 15 minutes then drained)


1 tablespoon agave (or honey)


 


Pinch of salt


Directions


How (your directions):


For the Crust:


Pulse hazelnuts and dates in a food processor.  I used 2 tablespoons of water and pulsed 4-5 times until the mixture could be pinched and stayed together.


Remove mixture from food processor and place in a pie dish, tart pan, or even a plate.  Form a circular crust about ¼ inch in depth.


For the Lime Filling:


Blend the avocado, zest and juice from 3 limes, the cashews (without the soaking liquid!), agave, and salt in the food processor or blender until smooth.


Using a spatula, spoon the lime filling atop the crust and spread evenly.


Refrigerate for at least 2 hours.


Slice into 6 pieces and serve with a cup of hot tea and blackberries!


 


Why (the science):  Hello healthy fats!  While avocados and nuts are known for being heart-healthy, they are also packed with fiber too 😊  This dessert is sure to satisfy!
