Fancy Avocado Toast

Avocado toast can be pretty plain- avocado on toast with salt and pepper.  Delicious, of course, but perhaps a little boring? Fancy Avocado Toast takes this classic to a new level in only 3 minutes or less! This Fancy Avocado Toast is perfectly balanced and nourishing, with whole grains and veggies for fiber, protein from the fried egg and a whole wheat seeded bread, and healthy fats from the avocado. It’s fancy because it’s topped with a grating of cheddar cheese and a pinch of oregano, which has an abundance of antioxidants to lower inflammation and is easy to add to savory meals. It’s also fancy because you can make a beautiful design by arranging the slices of radishes and cucumbers. 


Ingredients


What (your ingredients):


2 slices whole wheat bread (I love the 21 Whole Grains and Seeds version from Dave’s Killer Bread)


1 egg


2 radishes


1 small cucumber


½ avocado


Pinch of each: red pepper flakes, oregano, salt, pepper


To serve: grated cheddar cheese


Directions


How (your directions):


Place bread slices into toaster and toast to desired doneness.


Heat a nonstick skillet over medium heat.  Add 1 teaspoon olive oil, if using.


Crack egg into pan, turn heat to low, and allow egg to cook until desired doneness.


Slice radishes and cucumber paper thin, then set aside.


Once bread is toasted, mash ½ an avocado and spread onto toast.


Top one slice with sliced radishes and cucumbers. Sprinkle with a pinch or salt and oregano.


Top the other slice with the fried egg.  Sprinkle with salt, pepper, oregano, and red pepper flakes.


Grate a small amount of cheddar cheese on top.


Enjoy immediately!
