When anyone in my family is sick, I make this for dinner for its healing and restorative powers.  It’s definitely comforting and reminiscent of childhood, even if you’re not under the weather! 

Of course, a soup full of antioxidant rich veggies is good for you-it will boost your immunity when you’re feeling sick.  That’s why it’s called chicken soup for the soul!  Feel free to add shredded chicken to make this real chicken soup (but the matzo balls are filling on their own as well).


Ingredients


2 tablespoons olive oil


1 yellow onion, diced


4-5 celery stalks with leaves, diced


4-5 large carrots, diced


2 garlic cloves, minced


4-5 cups vegetable broth


1 bay leaf


¼ teaspoon oregano


¼ teaspoon pepper


⅟8 teaspoon thyme


 


1 package Matzo Ball Mix (I use Manischewitz)


Directions


Prepare matzo balls according to package.  Set aside in refrigerator. 


Heat olive oil in Dutch oven.  Add onions and cook for 3-4 minutes.  Add celery and carrots and stir for 3-4 minutes.  Add garlic and stir for 1 minute.


Add remaining ingredients and simmer for 10 minutes, allowing flavors to meld.


Add matzo balls, and cook according to package, about 20 minutes.


 


Serve hot and enjoy!
