Quick-Brined Rosemary Pork Chops, Easy Apple Chutney, and Roasted Potatoes and Broccoli

Brining your pork before grilling will yield an incredibly juicy chop!  You rinse the brine off before grilling, so do not be alarmed by the amount of salt and sugar used.  Give this a try the next time you make pork chops for dinner- gone will be the days of tough and dry chops, something you definitely want to avoid, and now quickly can. 

This well-balanced nutritious dinner serves a family of 4

Game-plan for Successful Dinner:

1.       Preheat oven to 400˚ F

2.       Prep broccoli and potatoes

3.       Roast potatoes

4.       Brine pork chops

5.       Make chutney

6.       Heat grill pan

7.       When potatoes are halfway done and need flipping, add broccoli to oven

Rinse and grill pork chops


Ingredients


Quick-Brined Rosemary Pork Chops:


4 chops


2 teaspoons dried rosemary


3 teaspoons salt


 


4 heaping teaspoons brown sugar


Easy Apple Chutney:


1 tablespoon butter


3 apples, diced


¼ cup raisins or dried cranberries


3 tablespoons apple cider vinegar


3 tablespoons brown sugar


¾ teaspoon dried ground ginger


¼ teaspoon salt


¼ teaspoon dried mustard


 


8 teaspoon allspice


Roasted Potatoes:


4 medium-large red potatoes, rough chop


1 tablespoon olive oil


 


Salt and pepper, to taste


Roasted Broccoli:


1 head, cut into florets


½ tablespoon olive oil


 


Salt and pepper, to taste


Directions


Quick-Brined Rosemary Pork Chops:


1.       Place pork chops on a plate.


2.       In a small bowl, combine rosemary, salt, and brown sugar.


3.       Massage the salt mixture onto both sides of the pork chops.


4.       Allow pork chops to brine for 15-30 minutes.


5.       Rinse the salt mixture off of the pork chops, and then blot each side dry.


6.       Heat oiled grill over medium heat.


 


7.       Grill pork chops for 4 minutes on each side.


Easy Apple Chutney:


1.       In a fry pan over medium heat, melt butter.  Add diced apples and sauté for 5 minutes.


2.       Add remaining ingredients and stir until evenly distributed throughout pan.


 


3.       Lower heat, cover with lid, and simmer until the rest of dinner is complete.


Roasted Potatoes:


1.       Roast at 400˚ F for 25 minutes.


 


2.       Flip, and then continue roasting for an additional 20 minutes.


Roasted Broccoli:


1.       Roast at 400˚ F for 20 minutes.
