Tomato, Olive, and Artichoke Sauce

Quick Tomato, Olive, and Artichoke Sauce is incredibly easy to make, and super nutritious. Many pasta sauces have added sugar and preservatives, but this fresh sauce combines 5 simple ingredients, and comes together in the time it takes to cook your pasta of choice. Enjoy this Quick Tomato, Olive, and Artichoke Sauce spooned over rice, quinoa, or stirred into a pasta salad, too. 


Ingredients


What (your ingredients):


1 tablespoon olive oil


1 leek


Pinch of salt


1 large clove garlic


1 pint cherry tomatoes


4 marinated artichoke hearts


15 kalamata olives


Directions


How (your directions):


Heat oil over medium heat in a sauté pan.


Slice dark green part and root of the leek off and discard. Slice leek in half lengthwise and rinse thoroughly to remove any sand and dirt. Thinly slice leek into half-moons and add to the olive oil.


Add a pinch of salt and sauté for 3 minutes. Mince garlic clove and add to the leek, along with the cherry tomatoes.


Slice artichoke hearts into bite-size pieces and add to the tomatoes, along with the olives.


Sauté for 8-10 minutes, stirring occasionally.


Serve over pasta and enjoy!
