Caramelized Onion and Mushroom Calzones

Calzones are the perfect make-ahead grab and go lunch, and the flavor combination of caramelized onions, mushroom, thyme, and feta makes these calzones feel elegant.  Store-bought pizza dough also ensures a quick and easy weeknight dinner.  Store in airtight container for 3 days.


Ingredients


Whole wheat pizza dough (I use Trader Joe’s version), room temperature


1 tablespoon olive oil


1 yellow onion, thinly sliced


1 package mushrooms, diced


5 sprigs fresh thyme


 


Feta cheese


Directions


Preheat oven to 400° F.  Grease a baking sheet or pizza pan with coconut oil or nonstick spray.


Over low heat in a sauté pan, cook onion slowly for about 30 minutes until caramelized and golden brown, stirring occasionally.  Remove to small bowl to cool.


Add mushrooms and fresh thyme leaves to pan and sauté on medium high heat for 5 minutes.


Divide pizza dough into 4 balls, then roll each one out into small circle.  On one side of the circle, place ¼ caramelized onions, ¼ mushrooms, and a few crumbles of feta.  Fold other half of circle over the mixture and seal by crimping the dough with a fork.  Repeat process with remaining 3 calzones and place on baking sheet or pizza pan.


 


Bake for 18-20 minutes.  Enjoy hot with marinara as a dipping sauce!
