Quick Quinoa with Raw Zucchini and Roasted Cauliflower

Quick Quinoa with Raw Zucchini and Roasted Cauliflower is one of the simplest meals to make and provides enormous health benefits.  Quinoa is one of the only plant-based foods that is a complete protein, which helped build and recover muscle and provide the building blocks of DNA (woah)!  The zucchini and cauliflower fill half of your plate with fiber and antioxidants, and the drizzle of tahini and oil helps satisfy you for lunch or dinner.  I like the combination of raw and roasted veggies here for the variety of texture.  Great meal prep option for the week!


Ingredients


What (your ingredients):


1 cauliflower, cut into florets


1 tablespoon olive oil


¼ teaspoon turmeric


¼ teaspoon paprika


¼ teaspoon salt


2 cups cooked quinoa (Tip: time-saving option to get precooked quinoa at Trader Joe’s)


1 raw zucchini, diced


To serve: drizzle of tahini and olive oil, pinch of salt and pepper


Directions


How (your directions):


Preheat oven to 400 °F.


Place cauliflower florets onto a parchment-lined baking sheet.  Toss cauliflower with olive oil, turmeric, paprika, and salt.  Roast for 25 minutes. 


Divide quinoa, cauliflower, and zucchini between 2 bowls. 


Drizzle with tahini and olive oil, and a pinch of salt and pepper. 


Why (the science):  Turmeric has been shown to increase memory, focus, attention, and cognition!  Be sure to eat anything with turmeric with a pinch of black pepper to absorb the brain boosting properties.
