White Pizza with Microgreens

White Pizza with Microgreens is more of a guide for creating a flavorful and interesting white pizza than it is an exact “recipe.” All you need is pizza dough, a few herbs, cheese, and your favorite microgreens (arugula would also work).  If using store bought dough, this dinner comes together in under 30 minutes for a quick weeknight meal. It’s a super elegant pizza, so serve at a luncheon to your friends as well. All the ingredient amounts are based on your preference, so be creative in the seasonings and make it your own!

Ingredients

What (your ingredients):

Pizza dough, store bought or homemade

Dash of Italian seasoning

Dash of garlic salt

Pinch of red pepper flakes

Mozzarella cheese (or your preferred vegan cheese or lactose-free cheese)

1 cup microgreens

1 teaspoon olive oil

½ lemon

Pinch of salt

Directions

How (your directions):

Preheat oven to 500°F.

Roll out pizza dough and place on a lined baking sheet.  Tip: you can spread a tablespoon of cornmeal on the baking sheet to prevent dough from sticking.  Top dough with Italian seasoning, garlic salt, and red pepper flakes.

Top with mozzarella cheese, then bake for 12-15 minutes (depending on thickness of pizza dough).

Meanwhile, place a handful of microgreens in a bowl, then drizzle with olive oil, the juice of ½ lemon, and pinch of salt.

Once baked, remove pizza from oven, plate, and top center of pizza with dressed microgreens.

Enjoy immediately!

Why (the science):  Pizza, another delicious way to sneak more greens and veggies into your diet.
