This is the fastest meal I’ve ever made (besides a peanut butter sandwich)! Vibrant, sweet, fresh, raw, and creamy, this is everything you crave on a warm spring or summer day. Trust me, this recipe is so easy and delicious that it will become part of your warm weather recipe rotation.
What (your ingredients):
2 large zucchinis
4 Roma tomatoes
¼ sweet or yellow onion
Juice from ½ lime
How (your directions):
Using a spiralizer, spiralize the zucchinis into noodles and place in a large bowl. Hint: if you don’t have a spiralizer, you could use a vegetable peeler to create long zucchini ribbons.
Add remaining ingredients to a high speed blender and blend until smooth.
Pour sauce over zucchini noodles and mix until sauce coats each noodle.
Serve in 2 bowls and enjoy!
