This dish comes together in 10 minutes or less! Wonderful as a breakfast side to scrambled eggs, or spooned over whole wheat pizza dough and baked for a nutritious and elegant weeknight dinner.
Why (the science): Leeks are a member of the allium family, meaning they have powerful anti-carcinogenic effects!
1 tablespoon olive oil
Pinch of salt and pepper
¼ teaspoon red pepper flakes (optional)
1 clove garlic, minced
4 tablespoons milk
3-4 ounces light feta cheese
2 tablespoons pine nuts
Cut tough, dark green parts from the leeks and the end of the bulb. Cut each leek lengthwise down the middle and rinse dirt and grit from between the layers:
Heat olive oil in a skillet over medium-low heat. Slice leek halves into thin half-moons and sauté for 5 minutes:
Add salt, pepper, red pepper flakes (if using) and garlic and sauté for 1-2 minutes.
Add milk and stir until leeks have absorbed all the liquid. Crumble feta and pine nuts over the top and remove from heat.
Serve hot or room temp and enjoy!
