There’s nothing better than grilled stone fruit in the summer- the fruit softens and caramelizes with the heat of the grill! The warm grilled apricots melt the goat cheese, creating a creamy dressing that pairs perfectly with crunchy walnuts. This Grilled Apricot and Goat Cheese Salad serves one, but can easily be scaled for a family or group!
What (your ingredients):
2 cups green leaf lettuce
3 apricots, sliced in half and pits removed
1 teaspoon avocado oil or coconut oil
2 tablespoons walnuts
½ ounce goat cheese
Dressing: your favorite vinaigrette, balsamic vinegar, or a squeeze of lemon juice and drizzle of olive oil
How (your directions):
Preheat grill over medium heat.
Rub each apricot half with oil, then place cut-side down onto grill. Grill for 3-5 minutes until the apricot begins to caramelize. Grill on the other side, if desired, for 2 minutes.
Place greens on a plate, then top with grilled apricots and walnuts. Crumble goat cheese over the salad, then dress with your favorite vinaigrette, balsamic vinegar, or a squeeze of lemon juice and drizzle of olive oil.
