Massaged Kale Salad with Apple and Pear

You know a salad is great when your significant other (ahem, picky husband) wants you to make it TWO nights in a row!  This Massaged Kale Salad with Apple and Pear is not only eye-appealing, but sweet, salty, creamy, and tart.  Yep, it hits all the right notes for a 10 minute, simple-assembly dinner. 


Ingredients


What (your ingredients):


1 head kale


1 apple, diced


1 pear, diced


2 ounces creamy blue cheese


Dressing:


2 tablespoons fig and olive spread (or your favorite spread!  Get creative!)


1 tablespoon apple cider vinegar


1 tablespoon olive oil


 


2-3 teaspoons agave, depending on sugar content of spread


Directions


How (your directions):


In a large salad bowl, rip kale into bite size pieces.


In a small bowl, whisk together fig and olive spread, vinegar, oil, and agave.


Pour dressing over kale leaves and massage into kale for 2-5 minutes.  Tip: massaging kale allows leaves to become sweet and tender.


Add diced apple and pear, then crumble in creamy blue cheese.
