Crunchy radishes, sweet and citrusy dressing, and protein-packed quinoa, this salad is not your average, boring salad 😉 It’s best cold or room temperature, so it makes the perfect meal prep lunch item, too!
Ingredients
What (your ingredients):
1 cup quinoa
2 cups water
Dash of salt
6-8 Easter radishes
1 orange
½ lemon
1 tablespoon honey
Directions
How (your directions):
In a medium sauté pan, combine quinoa, water, and a dash of salt. Bring to a boil, then cover, reduce heat to low, and simmer for 15 minutes.
Meanwhile, finely dice radishes and set aside.
To make the oil-free dressing, juice and strain 1 orange and ½ lemon into a jar. Add honey and a dash of salt, then whisk or shake vigorously until well combined.
When the quinoa has finished cooking, pour into a large bowl. Add radishes and honey citrus dressing, stirring to combine evenly.
Cover bowl and refrigerate at least 2 hours to allow quinoa to absorb dressing and cool.
Serve with slices of avocado or slivered almonds (or both!) over a bed of leafy greens.
