Butter Braised Cabbage with Caraway Seeds

In honor of St. Patrick’s Day, let’s celebrate the Irish with Butter Braised Cabbage with Caraway Seeds.  This side dish compliments any main entrée and is easily made by combining all ingredients and allowing them to slowly simmer away on the stove!  The Irish often make cabbage with bacon or pair it pork, ham, or sausage, but this version is light and vegetarian. Cheers!


Ingredients


What (your ingredients):


1 head green cabbage


2 tablespoons butter


1 cup diced red onion (~ ½ large red onion)


1 teaspoon caraway seeds


½ cup vegetable stock


½ teaspoon salt


1 teaspoon apple cider vinegar or white wine vinegar (optional)


Directions


How (your directions):


Using the shredder blade on the food processor, shred head of cabbage.


Heat butter in a large pan over medium heat.  Add diced red onion, caraway seeds, and shredded cabbage. 


Stir to combine.  Add vegetable stock then cover pan with lid.  Lower heat to lowest setting.


Allow to braise 25-30 minutes, stirring halfway through the cooking time.


Enjoy hot, warm, or room temperature.  Delicious with mashed potatoes!
