Vegan Kale Caesar Salad

Ingredients


What (your ingredients):


Vegan Caesar Dressing


½ cup raw cashews, soaked in warm water for 30 minutes, then drained


1 tablespoon lemon juice


1 teaspoon apple cider vinegar


1 teaspoon Dijon mustard


1 small clove garlic


2 tablespoons nutritional yeast


¼ teaspoon salt


Kale Caesar Salad


1 head kale, chopped into bite size pieces


¼ cup Vegan Caesar Dressing


2 tablespoons sunflower seeds


Himalayan pink salt and pepper to taste


Directions


How (your directions):


Add soaked and drained cashews, lemon juice, apple cider vinegar, mustard, garlic, nutritional yeast, and salt to a high-speed blender.  Blend on high for 30-60 seconds until smooth.


Add chopped kale to a large salad bowl.  Add ¼ cup Vegan Caesar Dressing to the kale, and massage for 2 minutes, allowing the kale to break down, soften, and turn a brighter green.


Top with sunflower seeds, then mix to combine.


Serve on two salad plates, making sure to salt and pepper!


Why (the science):  Typical Caesar salads can be very high in saturated fat, from the dressing to the parmesan, to the oily croutons.  This version is full of healthy fats and protein from the cashews and the sunflower seeds!
