Berry Banana Nut Baked Oatmeal

Berry Banana Nut Baked Oatmeal is one of the easiest recipes to make, and is the ultimate in healthy meal prepping! Ingredients


What (your ingredients):


2 cups rolled oats


2 cups boiling water


2 large ripe bananas


1 cup oat milk (almond milk works, too)


2 teaspoons cinnamon


1 teaspoon baking powder


¼ teaspoon salt


¾ cup blueberries


¾ cup blackberries


1/3 cup walnuts


Directions


How (your directions):


Preheat oven to 350°F.


Add rolled oats to a medium-size bowl and pour boiling water over the oats.  Set aside and allow to soak while you prepare the rest of the ingredients.


To a large bowl, add the bananas and mash with a fork or potato masher until smooth.  Stir in oat milk, cinnamon, baking powder, and salt.


Add soaked oats (with liquid), blueberries, blackberries, and walnuts to the wet banana mixture.


Pour into a 9x13 baking dish.


Bake for 40 minutes.


Enjoy warm with a dollop of yogurt and drizzle of maple syrup and almond butter.
