Flourless Blueberry Muffins (GF, Dairy-free)

Beware: these Flourless Blueberry Muffins are so insanely moist that they don’t even need butter! Bursting with blueberries, lemon zest, and the undeniable creaminess of almond butter, these muffins are the perfect healthy meal prep item for breakfast to give you stable energy throughout the morning. The almond flour stands in for all purpose flour to make these muffins even healthier and more satisfying. 


What (your ingredients):

1 cup blanched almond flour

½ cup rolled oats

½ teaspoon baking soda

½ teaspoon baking powder

½ teaspoon cinnamon

Zest of 1 lemon

Pinch of salt

½ cup applesauce

½ cup almond butter

2 tablespoons agave

1 cup blueberries

1 egg


How (your directions):

Preheat oven to 350°F.

Line a muffin tin with 8 silicone liners, then set aside.

In a large bowl, add all ingredients.  Stir until evenly combined.

Using an ice cream scoop, evenly distribute batter among lined muffin tin.

Bake for 35 minutes.
