This cow's milk cheese was made in collaboration with Milwaukee artist, John Riepenhoff. Our cheesemakers skim the richest strata of the vat in production and concentrate these creamy profiles in to this new Wisconsin original. Colby a very close relative of cheddar, but softer and more elastic. Double Cream Colby is the mother of all melting cheeses and it makes dreamy grilled cheeses. As far as we know, we are the only creamery making this cheese in the world!
