Mini Zucchini Fritters

These Mini Zucchini Fritters are the perfect healthy holiday appetizer! They are moist in the inside, crispy on the outside, and pack a flavorful nutrition punch. Serve with tzatziki sauce (made with dill and cucumbers) as the perfect Mediterranean-inspired holiday bite.
Ingredients
What (your ingredients):
2 cups grated zucchini
1 15-oz. can chickpeas, drained and rinsed
¼ yellow onion, diced
1 clove garlic, minced
Juice of ½ lemon
1 egg
¼ cup plain Greek yogurt
¾ cup breadcrumbs
¼ teaspoon salt
1 tablespoon olive oil for sautéing
Directions
How (your directions):
Place grated zucchini in a cheesecloth, nut milk bag, or paper towels and squeeze out all the liquid.
Add grated zucchini to a food processor, along with the drained and rinsed chickpeas, diced yellow onion, minced garlic clove, lemon juice, egg, Greek yogurt, breadcrumbs, and salt.
Pulse 5-10 times until mixture is combined but still has some texture.
Form into 16-18 small patties and place on a platter. Place in fridge for 5-7 minutes.
Meanwhile, heat olive oil in a pan over medium heat.
Add mini zucchini fritters to the pan and cook on each side, approximately 3 minutes per side.
Serve over a bed of Bibb lettuce with tzatziki sauce on the side.
