Summer House Salad

Everyone needs a simple, delicious, and easy house salad to accompany weeknight meals and evenings when you entertain!  The Summer House Salad could not be simpler and is especially good during middle summer when tomatoes are the ripest and sweetest.  Adding fresh herbs, like basil, elevates any salad! Summer House Salad is a perfect complement to linguine with pesto. 


Ingredients


What (your ingredients):


3 cups arugula


2 English cucumbers


2 Roma tomatoes or 1 cup cherry tomatoes


¼ teaspoon seasoned salt (the best is “Crazy Jane’s Mixed Up Salt”)


1 tablespoon good olive oil (you know, the one that tastes peppery and like olives)


2 tablespoons balsamic glaze


4-5 basil leaves


Directions


How (your directions):


Place arugula in a medium serving bowl.


Cut English cucumbers into half lengthwise.  Then place cut-side down and slice into half-moons.  Add on top of arugula.


Dice Roma tomatoes into bite-size pieces or slice cherry tomatoes in half.  Add on top of cucumbers.


Season salt with seasoned salt.


Drizzle salad with olive oil and balsamic glaze.


Chiffonade basil leaves and sprinkle over salad.


Toss before serving and enjoy!


Why (the science):  Tomatoes are excellent sources of biotin, which supports metabolism by promoting the enzymes responsible for breaking down carbs, fats, and protein.
